Super Easy Fiesta Brown Rice with Ground Pork
Delicious, gluten-free, and healthy. Plus, a breeze to make, perfect for quick meal, or great idea for potluck/party. This super easy fiesta brown rice has proven to be a keeper in my family.
Brown rice in general is not really my kids’ favorite as it is harder to eat compared to white rice. However, since brown rice has more fiber, I tried to find ways to serve it to them every once in a while. The rice is not too dry since it has some of the water content from the canned tomato and black beans. That’s a winner.
This recipe of fiesta brown rice is a fusion of taco and southwestern-style rice ingredients. I got this lightbulb moment as I went through my pantry and decided to use-up some canned foods. I found cans of black beans, diced tomatoes, and corn. I was like, hm… Then, digging in further, I found taco seasonings. Then, I remember about the ground pork in my fridge. Aha! So, that’s how I whipped up this recipe. When the kids liked it, plus it is so easy to make, I had to write the recipe down.
Tip for cooking brown rice on rice cooker:
Add 2 cups of cleaned brown rice, 3 cups of water to the rice cooker, and cook it per your rice cooker’s direction. You should have a fluffy cooked brown rice.
Ingredient:
- 2 cups cooked brown rice
- ½ lb ground pork
- 4 cloves garlic – minced
- 1 medium-sized shallot – sliced
- 1 can (15 oz or 425 gr) unsalted and undrained black beans
- 1 can (14.5 oz or 411 gr) undrained diced tomato
- 1 can (15 oz or 425 gr) whole kernel corn – drained
- 2 tablespoons olive oil
- 2 tablespoons taco seasoning
- Salt and pepper
- Basil leaves to garnish (optional)
Direction:
- Preheat olive oil in a wok under medium-heat. Once heated, add garlic and shallot. Stir-fry until it is fragrant or a bit brownish.
- Add ground pork, salt and pepper. Stir-fry until the pork is fully cooked – no more reddish color.
- Add diced tomato and stir for about 2 minutes.
- Then, add cooked brown rice, black beans, corn and taco seasoning.
- Give it a good stir until all are mixed nicely. Cook for about another 5 minutes.
- Your brown rice fiesta is ready to be served!
