Simple Spinach Tomato Salad
It’s gonna be healthy meal day, so why not having this Simple Spinach Tomato Salad. Yesterday, we are having a big feast kind of day due to the big game, Super Bowl. Well, we did not really catch on the watching bug, but more like the ‘finger-food’ bug. Yup, my family is the rare one – we do not really follow football. So, yesterday, we just had many finger foods as our meal for the entire day, not the regular sit down lunch or dinner.
Anyhow, since I was really stuffed with all kinds of finger foods plus junk food, salad is what I will have for lunch today. It is kind of a way to ‘wash down’ all the greasiness and help me to digest yesterday’s food better. For salad, this Simple Spinach Tomato Salad recipe is usually my go-to salad for after-feast day. It is so simple to prepare – if you already have the boiled egg, all it takes probably just 5 minutes! Moreover, it is really good with any types of dressing – thousand island, ranch, vinaigrette and so on. Or, you can just eat the salad the way it is – with no dressing. The combination of spinach, tomato and egg is already tasty. Look at the color, isn’t it appetizing? Yum!
Tip: For vegetarian, skip the bacon crumble or substitute it with crispy onion. Also, you can toss some avocado slices for enhanced flavor!
Ingredient:
- 2 cups baby spinach
- 1 steak tomato, diced
- 2 boiled eggs (cooled and peeled), diced
- A pinch of crumbled bacon (optional)
Direction:
- Remove the stems of the spinach. Wash, drain and pat dry thoroughly
- Arrange baby spinach in salad bowl
- Add tomato and boiled egg
- Sprinkle with bacon crumble (optional) and the dressing of your choice.
