Simple Spinach Stir-fry with Ground Beef
My one-year old son is becoming quite a picky eater these days. Some people say, around this age, children’s taste bud is starting to develop and they start to have certain favorite in terms of eating. Vegetable is one of the tough one for my son to ensure that he eats it, at least for my household. But, thank goodness, he likes this simple Spinach Stir-fry with Ground Beef as much as he likes this yu choy recipe.
This recipe is so quick and easy to prepare and packed with lots of nutritional value. Spinach has a good dietary fiber, great source of antioxidant, and low in calories. Moreover, I believe spinach is considered as one of the world’s healthiest food as well. What a motivation for me to ensure that he likes spinach with this Simple Spinach Stir-fry with Ground Beef recipe!
Of course, to serve the dish to him, I need to cut the spinach small or into bite-sized so that it is easy for him to swallow. I added the ground beef in this recipe so that it will not be all-veggies for my son. However, if you like, you can add any other kind of meats, such as, chicken, shrimp or pork to substitute for the ground beef.
Tip: For vegetarian, you can skip the ground beef.
Ingredient:
- 1 lb baby spinach
- ¼ lb ground beef
- 1 tbsp minced garlic
- 1 tbsp sliced shallot
- ½ cup chicken broth
- 1 tbsp olive oil
- Salt and pepper to taste
Direction:
- Heat the oil in a pan. Once heated, add garlic and shallot and cook until it is fragrant
- Add ground beef. Stir until it is brown.
- Add baby spinach, salt, pepper and chicken stock
- Stir about 2-3 min or until spinach is a bit soft. Serve it hot with rice.
