Shrimp Croquette with Salted Egg Yolk
Do you have a moment when you don’t feel like doing grocery but you ‘almost’ run out of ingredients to make something that you usually make? The other day, I had this kind of moment. When I put together, I had shrimp, potato, and salted egg. I should say, it was a moment for creative innovation. Somehow, someway, from those main ingredients, I come up with a recipe of shrimp croquette with salted egg. It was delicious!
Crunchy on the outside and soft on the inside. The salted egg yolk perfectly blends well with the mashed potato. Add the shrimp to give a bit of a kick to its flavor and a ‘crunch’ to the texture. Dip it with your favorite condiments and whoa, I am sure you will be content!
This shrimp croquette is also perfect to make when you have leftover mash potatoes from making baked potato skins. It is a great appetizer for a party since you can make ahead and freeze it (prior to frying or baking it). You just need to pop it back into the oven for about 10 minutes to reheat. Then, it will be crispy and crunchy again.
Tip: For healthier option, you can bake the shrimp croquette in the oven under 400 degrees Fahrenheit for about 15 minutes. Make sure you spray or brush a little bit of oil onto the shrimp croquette on the pan sheet before putting it in the oven.
Ingredients:
- 6 medium-sized potatoes
- 1 lb medium/large size cooked shrimp – peeled, leave tails on
- 1 tablespoon fried shallot
- 3 salted eggs yolk
- 1 teaspoon nutmeg
- A pinch of pepper
- 2 eggs
- 1 cup panko breadcrumbs
- Vegetable oil for frying
- 8 cups water for boiling
Directions:
- Put the potatoes, salted eggs, and water into a large pot. Remove the salted egg after it boils for 20 minutes. Keep boiling the potatoes for another 40 minutes.
- Peel the salted eggs and separate the white and the yolk. Set aside the white part for later use. You can use it to make, for instance, this delicious red chard recipe
- After the potatoes are done. Peel and put them in a large bowl.
- Together with the salted egg yolks, mash them together.
- Add fried shallot, nutmeg, and pepper. Mix them well.
- In a separate small bowl, beat the eggs.
- In another plate/bowl, pour in the breadcrumbs.
- Take about a tablespoon of potato mix and mold it into an oval shape. Insert one shrimp into it. Repeat the process until all the potato mix are all done.
- Cover each shrimp croquettes with the beaten egg, then roll it over to the breadcrumbs.
- Pre-heat the oil in a frying pot. Once it is heated, add the shrimp croquette into the pot and fry until it is golden brown.
- Take it and let it cool down a bit before serving it. Enjoy!
