Salted Egg Butter Shrimp (牛油黃金虾)
Salted Egg Butter Shrimp (牛油黃金虾), another seafood recipe… Yup, it’s time for shrimp to shine! I bought quite a bit of seafood the other day to stuff it to my fridge. Golden pompano, salmon, shrimp, you name it… The best grocery store for me to get seafood in my area is either in Seafood City or 99 Ranch. I find that the seafood that they sell is pretty fresh. However, it is quite a drive for me to get to those two places.
Anyhow, the other day, my husband saw a food picture taken by his friend in Singapore about salted egg porkchop and has been craving it since. It seems that everything with salted egg has been a ‘trend’ in Singapore. I saw many food pictures such as salted egg custard bun, salted egg popcorn chicken, and so on. However, it is very rare to find salted egg meal in the United States, at least, not that I know of.
When I saw there is a boiled salted egg sold in 99 Ranch, there went my A-ha moment. Let me experiment with it, with shrimp to be precise. So, tada… it’s my ultimate Salted Egg Butter Shrimp (牛油黃金虾). The flavor of the salted egg blends nicely with the fried shrimp. It gives a crunchy savory texture. After I created this dish, it turned out that salted egg shrimp is a quite common Asian dish. Overall it is quite a simple dish to make and it is a delish!
Tip: The boiled salted egg yolk can be easily mashed with fork.
Ingredients:
- 1 lb shrimp – cleaned and peeled
- 1 lime
- 3 boiled salted egg yolk – mashed
- 1 tablespoon shallot – chopped
- 1 tablespoon minced garlic
- ¼ medium-sized onion – chopped into wedges
- 2 stalk green onion – chopped
- 2 tablespoons unsalted butter
- Vegetable or Canola oil for deep frying
For Batter
- 1 cup all purpose flour
- 1/2 cup rice flour
- 2 teaspoon cayenne pepper powder
- 1 tablespoon corn starch
- 1 teaspoon garlic powder
- A pinch of salt and pepper
Direction:
- Cut the lime into half and press out the juice onto the peeled shrimp. Set aside for about 5-10 minutes.
- In the meantime, preheat oil in deep fryer to about 325 degree Fahrenheit or 160 degree Celsius.
- Mix all the “batter” ingredients for coating.
- Coat all the shrimp with the batter mixture.
- Once it is fully coated, fry them until it is cooked or about 3 minutes.
- Preheat butter in a pan on medium heat.
- Add garlic, shallot and onion. Stir them until it is fragrant.
- Add the salted egg. Stir until it is foamy.
- Add the fried shrimp onto the pan. Stir them until the shrimp are all coated with the foamy egg. Serve and garnish with chopped green onion.
