Grilled Lemon Chicken Skewers
Tender and juicy grilled lemon skewers that will not disappoint even the pickiest eaters. Each chicken skewers are marinated in Greek yogurt, lemon juice, minced garlic and other spices that perfectly balance one another out. It is light, delicious, juicy and tender making it great healthy lunch or dinner options. Also, these grilled lemon chicken skewers are a great choice for your summer grilling season. For example, you can alternate between grilling these chicken skewers, beef short ribs, corn, salmon, spicy pork skewers, or sweet garlic shrimp skewers – you get the idea.
These chicken skewers with lemon are easy to make. Just remember to give the chicken enough time to marinate. Preferably, marinate the chicken the day before so that all the spices can penetrate through each chicken pieces. So, time is the key for this grilled lemon chicken skewers/kebabs.
You can also make marinate a huge batch of these chicken pieces and save the remaining for later use – marinate the chicken overnight in the refrigerator. Then, separate some marinated chicken into a Ziploc and freeze them for up to a month. When you are ready, then defrost the frozen marinated chicken in the refrigerator, thread the chicken into the bamboo skewers, and grill them. Let’s get cooking, shall we?
Tools I used:
- Stove-top grill – Non-stick stove-top grill for any kind of quick grilling, especially useful in wintertime as I do not feel like grilling outside in the cold. Evenly heated, easy cleaning, easy to flip/stir and very durable.
Tip: For this lemon chicken skewers recipe, it is better to use boneless skinless chicken. It will be juicier and will not be as tough as the chicken breast. Also, do not forget to soak the bamboo skewers into the water for at least 2 hours prior to grilling. It is to prevent the bamboo skewers from burning.
Ingredient:
- 2 lbs. boneless skinless chicken thighs – cut into bite-sized or about 1.5-inch cubes
- 6 garlic cloves – minced
- 1 lemon – squeeze to get the juice and grate to get its zest
- ½ cup plain Greek yogurt
- 1 teaspoon chili powder
- 2 teaspoons paprika powder
- ½ teaspoon cumin powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- Bamboo skewers – submerged in the water for at least 2 hours.
- 1 medium red onion – cut into wedges and then, cut half the wedges
- 1 red bell pepper – cut into wedges and then, cut half the wedges
- Spray olive oil or Olive oil to brush
Direction:
- In a mixing bowl, add minced garlic, lemon juice, lemon zest, yogurt, chili powder, paprika, cumin, salt, and black pepper. Mix them well.
- Then, add the chicken to the mixing bowl. Cover, refrigerate and let it marinate for at least 4 hours or, even better, overnight.
- Alternate threading red pepper, red onion, and the chicken pieces to the bamboo skewers. Repeat until all the chicken pieces are all gone. Do not thread it too tight.
- Next, pre-heat the grill under medium-high heat. Spray some oil to the grill or brush some olive oil to the grill.
- Grill the chicken skewers until it cooked through or about 15 minutes or so. Don’t forget to turn the skewers occasionally.
- Transfer the skewers to a serving plate and enjoy!
