Farmer’s Breakfast Loaded Potato
Wow, what a hectic busy day! Oh well, I’m glad the day is over and I survived the day. Yay, me!!! The good thing is that I powered up myself with a hearty farmer’s breakfast loaded potato in the morning. This is one of my go-to breakfast meals if I know I will have a super-duper busy day.
First of all, it is Breakfast. After all, there is a saying that you should “Eat breakfast like a king, lunch like a prince and dinner like a pauper!” Second of all, since it is a fully-loaded breakfast, it will be okay for me if I ‘forgot’ or skip lunch if I got swamped with stuff like chasing my little girl, holding my baby boy and finishing up a phone conversation to finish up a project – just kidding. The point is, I will not get hungry easily.
Third of all, after you prepare all the ingredients, you just need to focus on one pan. That’s right, just one pan. It’s a one-pan meal or so you call it. Last but not least, who can resist the combination of pork belly, cheese and potato? At least not me! Hey, after thinking hard about it, the crispy potato skins also has this three-musketeer’s combo, wow! Those three are such good buddies that they just go perfectly well with one another. I know I’m a bit biased, lol. Give it a try and let me know what you think.
Tip: For enhanced flavor, you can switch pork belly with bacon (or even better with crumbled bacon!). You can eat it the way it is or wrap it with tortilla. Yum!
Ingredients:
- 1 lb thin-sliced pork belly, cut into 1-inch thin-sliced square
- 1 medium-sized onion, diced
- 1/2 tablespoon minced garlic
- 2 piece Chinese sausage, cut into 1/2-inch thick
- 6 small potato, peeled and diced
- ½ cup water
- 1 cup shredded cheddar cheese
- 4 egg, beat lightly with fork
- 1 cup chopped parsley
- Salt and pepper to taste
Directions:
- Preheat a pan in a medium-high heat. It’s not necessary to put any oil, as the oil from the pork belly will come out. Cook pork belly for about 3-5 min or until it is slightly crispy. Set aside.
- With the leftover oil that came out from pork belly, add diced onion and garlic into the pan and cook until it is slightly brownish.
- Add potato, stir it occasionally, and cook for about 3-5 min until it is a bit ‘charred’.
- Then, add water, close the pan with a lid and cook for about 10-15 min or until the potato is soft.
- Add Chinese sausage, egg, salt and pepper.
- Stir occasionally so that everything ‘blend’ nicely together.
- Sprinkle cheddar cheese and cook until it is starting to melt.
- Turn off the heat and garnish with chopped parsley. Enjoy!
