Delicious & Easy Banana Pandan Muffin
My kids love cupcakes. However, I do not want them to consume too much sugar. My solution – muffin. I told them that muffin is actually some sort of cupcakes without the added sugar frosting on top. As a result, they love muffin too! So, today I am sharing this muffin recipe that is easy to make, delicious, and very moist – Banana Pandan Muffin.
This banana pandan muffin is very easy to make, because basically you just need to whisk all the ingredients together in one big mixing bowl. Once everything is thoroughly mixed, you just need to pour the batter in the muffin liners and baked them in the oven. Once the baking time is up, voila, all the fluffy and moist muffins are ready for you to enjoy. Simple, isn’t it?
Tip: To check if the muffin is completely done, take a toothpick and insert it to the center of the muffin. If it comes out clean, the muffin is done. Also, for the recipe below, you can add more sugar if you like it sweeter.
Ingredients:
- 3 ripe bananas
- 1 egg – beaten
- 1/3 cup unsalted butter – melted
- 1 ½ cups of all-purpose flour
- ½ cup sugar
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 2 teaspoon pandan paste
Directions:
- Preheat the oven to 350F.
- Place muffin liners in a muffin tin.
- In a mixing bowl, mash the ripe bananas until all are completely mashed.
- Add the melted butter, flour, sugar, salt, baking soda, vanilla extract, pandan paste, and beaten egg. Mix them all until there are hardly any lumpy batter.
- Fill the muffin liners with the batter about ¾ of the muffin liners.
- Bake for 40 minutes at 350F.
- Remove from oven and let it cool for a few minutes prior to serving. Enjoy!
