Creamy Albacore Tuna Cucumber Tomato Salad
This creamy albacore tuna cucumber tomato salad is one of my favorites summer recipes. Though it is creamy, it is quite light, very fresh and refreshing especially during the hot summer weather. Easy to make and does not require any cooking in front of the stove. You can make this salad in a big batch and meal prep it for the next few days, just like this spinach tomato salad.
The key to this refreshing creamy tuna cucumber salad is fresh produce. Using fresh cucumber, tomato, celery and shallot make a difference to your salad. Also, the albacore tuna adds a great taste and great texture to this salad. Making it a perfect side dish to your favorite entrée.
Tip: This creamy tuna cucumber salad can be stored in the fridge for up to 3-4 days. So, this kind of salad is one of good meal prep ideas. However, it is best to remove the cucumber’s and tomato’s seed for meal prep, so that the salad will not be too watery after few days.
Ingredient:
- 1 cucumber – (optional: remove seed and) sliced into bite-sized
- 2 tomatoes – (optional: remove seed and) sliced into bite-sized
- 1 stalk celery – sliced thinly
- 1 medium-sized shallot – sliced thinly
- 3 tablespoons mayonnaise
- 1 tablespoon relish
- 1 can of albacore tuna (7 oz) – drained
- Sea salt and pepper to taste
Direction:
- In a large salad bowl, add sliced cucumber, sliced tomatoes, thinly sliced celery, thinly sliced shallot, mayonnaise, relish, and albacore tuna. Mix thoroughly.
- Sprinkle with salt and pepper to your liking.
- Serve the salad. Enjoy!
