Cheese Burrito with Charsiu BBQ and Rice
Psstt… I got a great meal recipe to share with you for a lazy Sunday or for an in-between-meal snack. Yes, a snack… nothing wrong with having a ‘full-meal’ as a snack, right ^^? Besides, I think it is actually much healthier than munching on a bag of chips. Anyhow, one day, I just ‘whipped up’ this burrito by what I have handy in my fridge and my pantry. I had some left-over flour tortilla, rice, charsiu bbq, crispy onion, etc… The next thing I know, a delicious burrito recipe is created. I would call the meal, Cheese Burrito with Charsiu BBQ and Rice.
You can think of this cheese burrito with charsiu bbq and rice as a fusion between Mexican and Chinese. The charsiu bbq flavor blends well with Mexican cheese and flour tortilla. It is like an explosion of flavors in your mouth. Moreover, the crunchiness from crispy onion, lettuce and flour tortilla balances out the soft steamed rice and melted cheese. It’s just WOW! This recipe is definitely a keeper, so I had to write it down and share it with you. Ever since that time, I have made the burrito several more times. The kids are just loving it.
So, the serving for the recipe below is only for making one burrito. You can multiply easily if you were to make more than one. Also, don’t be afraid to add the ingredients that you like more or reduce any that you will not enjoy as much. It’s all about finding the right balance. The recipe below is my right balance. Tip: Do not heat up the tortilla for a long time. It will harden the tortilla and will make it hard to fold. Try to fold the tortilla as fast as you finish adding all the ingredients.
Ingredients:
- 1 flour tortilla
- A handful of shredded Mexican cheese blend
- ½ cup cooked rice
- 6 slices (or more) of charsiu BBQ
- 1 leaf Romain lettuce – chopped
- A handful of crispy fried onion
- ½ medium-sized avocado – sliced
Directions:
- Preheat the tortilla in a low-to-medium heat.
- Spread out the shredded cheese on top of the tortilla. Wait until the cheese is melted, then add the cooked rice and charsiu bbq. Heat them up for about 1 min or so.
- Turn off the heat. Add lettuce, avocado and crispy onion.
- Quickly fold it. Fold up the bottom to cover the filling, then fold left and right. Roll up tightly, then wrap in foil. Imagine that you are trying to make a rectangular shape using a round tortilla.
- Serve it on a plate or you can directly pick it up and bite it!
