Stir-fry Kale with Chicken

This Stir-fry Kale with Chicken is another great nutrient-pack dish. It’s because Kale is a super green that is considered as one of the power-packed nutrients vegetables. To combat this, my trick is to thinly slice each kale or shred it into long strips. This way, it is easier to chew and it can absorb the seasoning flavor evenly. Tips: When making corn starch mixture, use luke-warm water. Using a hot water will make a lumpy mixture.

Chicken Stir-Fry Kale

Ingredients:

  • 1 bunch of Kale (about 6-7 leaves) – cut into long thin pieces
  • 2 oz of diced chicken
  • 1 tablespoon of minced garlic
  • 1 tablespoon rice wine
  • 2 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon of corn starch
  • 1/2 cup of water
  • Salt and Pepper to taste

Directions:

  • Heat oil in a pan until a bit smoky.
  • Add garlic and chicken into the pan. Cook until the chicken is done.
  • Add rice wine and oyster sauce. Mix everything well.
  • Add Kale and water into the pan. Stir a little bit and cover the pan with a lid for about 3 minutes
  • In a separate bowl, mix 1 tablespoon of water and corn starch to create a corn-starch mixture
  • Add salt and pepper – a pinch of each should be enough. Once the taste is okay, pour the corn starch mixture into the pan
  • Cook until it is boiled. Serve with rice.
